A delicious Ethiopian comfort food. 100% vegan
1/4 red onion chopped
1 Roma tomato chopped
1/2 tbsp minced garlic
1/2 tbsp minced Ginger
1 tsp berbere
1 1/2 cup water
1/4 cup Shiro powder
1/2 tbsp salt
1. In a saucepan over medium high heat, add onions and cook until translucent. Then add tomatoes, garlic and ginger
2. Add olive oil and stir in the berebere. It will turn into a paste. Reduce heat to medium low. Cover and let simmer for 10 minutes
3. Add the Shiro powder then slowly incorporate water to avoid lumps.
4. Season with salt. Cover again and let simmer for 15 minutes.
